Alternatives To Lower Cholesterol Naturally

Poached Eggs Over Sautéed Greens
You’ll enjoy this tasty way to start the morning off right… even if you’re not a breakfast person.
Poached Eggs Over Sautéed Greens
4 Tbsp chicken broth
1 cup thinly sliced leeks (white part only of 1 large leek)
6 medium garlic cloves, sliced
4 cups chopped kale
2 Tbsp fresh lemon juice
4 cups water
1 tsp light vinegar (rice, apple cider or white wine)
4 free-range chicken eggs
Sea salt (to taste)
Black pepper (to taste)
Heat the chicken broth in a 12-inch skillet over medium heat. Sauté leeks in the broth for 3 minutes, then add garlic and sauté both veggies for 1 more minute. Next, add the kale and lemon juice and simmer on medium-low heat for 10 minutes, stirring occasionally.
While the vegetables are simmering, bring 4 cups of water (or a little more if needed to completely cover the eggs) and the vinegar to a fast simmer (not boiling) in a non-stick skillet large enough for your 4 eggs. Crack each egg into a small bowl or cup, and gently drop each egg into the water. Turn off the heat, cover the skillet and poach the eggs for approximately 5 minutes in the vinegar water. With a slotted spoon, remove each egg and place on top of the greens. Salt and pepper your eggs and greens to taste, then serve immediately.
