Blueberry Peach Crisp
Enjoy this sweet dessert treat that’s sure to knock the chill off any blustery winter day.
Blueberry Peach Crisp
10 oz fresh or frozen blueberries
1 lb fresh or frozen peach slices
¼ cup apple juice
Granola Topping (recipe below)
Place your blueberries* in the bottom of a square 8-inch baking pan. Then place your peaches* on top of the blueberries. Now drizzle the ¼ cup of apple juice over the fruit. Place the Granola Topping mixture (recipe below) evenly over the peaches and blueberries, and bake uncovered for about 45 minutes or until golden brown in a preheated 350-degree oven. This wholesome fruity dessert is delicious served warm or cool.
*If you’re using frozen fruit, be sure to thaw and drain them of excess water before placing in the baking pan.
Granola Topping
1 cup pitted dates
½ cup almonds
½ cup oats
½ tsp cinnamon
2 Tbsp apple juice
Remove the pits from the dates and place the dates in the bowl of a food processor. Add the almonds, oats and cinnamon and mix for one minute, or until the ingredients are well blended. Add 2 Tbsp of apple juice and mix well.
